My kids ask for a chocolate chip cookie cake for nearly every birthday.  The ones you get from the grocery store are a single layer and usually look pretty meh.  So I was thinking about how to take the average cookie cake and make it party-worthy!  Behold...the 3 layer cookie cake!  Let's be honest...one layer is never enough cookie anyway! 

I started with my favorite cookie recipe and doubled it. When the cookie dough was mixed, I divided it into 4 equal parts.  3 parts for each layer of the cookie and the 4th part was extra so I just baked them up into regular size cookies.  I needed something to toss at the family to keep them away from the cookie cake long enough for me to assemble and take the pictures.

The Wilton 12" Round Giant Cookie Pan lined with wax paper was perfect for baking up these colossal cookies.  A large cookie sheet would work too, but I liked the idea of this pan to keep it from spreading any larger than 12".

As each layer came out of the oven, I let it cool all the way before flipping it out of the round cookie pan onto a cookie sheet to peel the wax paper off the bottom.  As long as the cookie is fully baked and completely cooled, it should not break.

For the frosting in between the layers, I used chocolate buttercream because the flavor is perfect to go with cookies...unanimous vote by my cookie-loving family!  I love that you don't have to worry about spreading the frosting all smooth and perfect for this cake. 

One of the cookies ended up a little larger than the others, so I made that the bottom layer...a little less noticeable that way. I don't have a giant spatula, so I used two spatulas, one on each side, to move the cookies and stack them on top of each other.

Then, the final touch is the name cake topper!  It really elevates the cookie to party status, don't you think?  You can order a name cake topper here:

Nothing goes better with cookies than some nice cold milk, in this case, strawberry milk!  The cookie as a milk bottle topper is a fun little detail for a party or celebration.  These are Chips Ahoy and I used the straw to make the holes in the cookies.  Put the cookie on a hard surface and twist the straw firmly against the top of the cookie until it makes a hole all the way through!

Look at these little cookie stacks tied up with ribbon!  Aren't they adorable?  And it couldn't be any simpler...just stack and tie.  You can use them as table decorations, or bag them up as little party favors.  You could even add a tiny tag to the ribbon to say "Thanks for coming".
