I started with my favorite cookie recipe and doubled it. When the cookie dough was mixed, I divided it into 4 equal parts. 3 parts for each layer of the cookie and the 4th part was extra so I just baked them up into regular size cookies. I needed something to toss at the family to keep them away from the cookie cake long enough for me to assemble and take the pictures.
For the frosting in between the layers, I used chocolate buttercream because the flavor is perfect to go with cookies...unanimous vote by my cookie-loving family! I love that you don't have to worry about spreading the frosting all smooth and perfect for this cake.
One of the cookies ended up a little larger than the others, so I made that the bottom layer...a little less noticeable that way. I don't have a giant spatula, so I used two spatulas, one on each side, to move the cookies and stack them on top of each other.
